All-purpose flour is the refined, processed derivative of whole wheat grain. In the Ayurvedic kitchen, it is recognized as a highly processed form of Godhuma (wheat). While whole wheat is valued for its nourishing and Vata-pacifying qualities, the refining process removes the bran and germ, significantly altering its digestibility and nutritional profile. It is considered a heavy, dense food that requires a robust digestive fire (Agni) to process effectively. Culinary traditions often use all-purpose flour for its elasticity and texture, which allows for the creation of delicate pastries, breads, and steamed preparations. However, because it lacks the fiber and vitality of the whole grain, it is traditionally recommended to be prepared with digestive aids—such as ghee, warm spices, or fermentation—to mitigate its tendency to create heaviness or stagnation in the digestive tract.
