Almond milk (Vatada Dugdha)

Almond milk is a nutrient-dense, plant-based emulsion prepared by blending soaked almonds with water and straining the solids. In the Ayurvedic kitchen, it is valued as a nourishing, cooling, and easily digestible alternative to dairy, particularly when fresh, homemade, and consumed warm. Unlike heavy dairy, it is considered lighter on the digestive system while still providing significant 'tarpaka' (nourishing) qualities. Because it lacks the heavy, mucus-forming qualities of animal milk, it is often preferred by those with sluggish digestion or those seeking a lighter, sattvic beverage. Always soak raw almonds for 8-12 hours and remove the skins (peel) before blending. This process, known as 'samskara,' reduces the 'guru' (heavy) and 'ruksha' (dry) qualities of the raw nut, making it more digestible and 'sattvic.'
