Black Salt (Sauvarchala)
Black salt, known in Ayurveda as Sauvarchala, is a distinctive, sulfur-rich rock salt prized for its unique pungent aroma and digestive properties. Unlike common table salt, it is traditionally processed to achieve its characteristic dark color and mineral profile, making it a staple in Ayurvedic culinary practice for enhancing the flavor and digestibility of meals. In the kitchen, it is valued for its 'deepana' (appetizing) and 'pachana' (digestive) qualities. It is considered lighter and more subtle than other salts, making it an excellent condiment for stimulating the digestive fire (Agni) without causing the same level of water retention often associated with excessive intake of common sea salt.
