Buttermilk (Takra)
Buttermilk, known in Ayurveda as Takra, is a foundational culinary preparation traditionally obtained by churning yogurt with water. Unlike modern commercial buttermilk, classical Takra is prized for its unique ability to be both nourishing and easily digestible. It is considered a superior culinary medium for balancing the digestive fire without overwhelming the system, often used as a base for soups, gravies, and as a post-meal digestive aid. In the kitchen, Takra serves as a versatile vehicle for spices and herbs. Its inherent qualities allow it to be transformed into a refreshing beverage or a savory accompaniment to grains. When prepared correctly—diluted and churned—it is regarded as a wholesome, daily dietary staple that supports regular bowel movements and maintains internal balance, provided it is consumed according to the season and individual digestive capacity.
