Chicken Thighs (Mamsa)

In Ayurvedic culinary tradition, meat (mamsa) is recognized for its profound nourishing and building qualities. Chicken thighs and lamb are considered dense, grounding foods that provide significant strength (bala) and vitality (ojas). Because these meats are naturally heavy (guru) and unctuous (snigdha), they are prized for their ability to pacify Vata dosha, though they require a strong digestive fire (agni) to be properly assimilated. From a kitchen perspective, these meats are best prepared with digestive-enhancing spices (deepana) to counteract their inherent heaviness. While they offer deep nourishment for the tissues (dhatus), they are generally considered less suitable during times of acute digestive sluggishness or when Kapha or Pitta imbalances are present, as their heating nature and density can increase internal heat or congestion.
