Dried Kokum Rinds (Vrikshamla)
Dried Kokum rinds are the sun-dried outer peels of the Garcinia indica fruit, prized in Ayurvedic culinary traditions for their distinct sourness and cooling properties. Unlike many other souring agents, Kokum provides a clean, tangy flavor profile that is highly valued in coastal Indian cuisines for balancing heavy, oily, or rich preparations. Preparation notes
