Recipes Through an Ayurvedic Lens

Flaxseeds (Atasi)

Flaxseeds, known in Ayurveda as Atasi, are small, nutrient-dense seeds prized for their unctuous and heavy qualities. In the kitchen, they are valued for their ability to pacify Vata dosha while providing a satisfying, earthy flavor. They are traditionally recognized for their digestive-stimulating properties and their role in supporting healthy bowel regularity. From a culinary perspective, flaxseeds offer a nutty, slightly bitter profile that becomes more pronounced when toasted. Because of their high oil content and mucilaginous nature, they are often used as a functional ingredient to add texture to breads, granolas, and porridges. When ground, they act as a natural binder in vegetarian cooking, though they should be consumed in moderation due to their heavy (Guru) nature.

Preparation notes

For optimal digestibility, it is recommended to dry-roast flaxseeds lightly before grinding. Always grind fresh to prevent the oils from oxidizing. Soaking ground flax in water creates a mucilaginous gel that is easier for the body to process.
