Granulated sugar (Sharkara)
Granulated sugar, known in Ayurveda as Sharkara, is a refined sweetener derived from sugarcane. Unlike jaggery or raw cane products, it undergoes significant processing, resulting in a pure, crystalline form that is considered more cooling and easier to digest than unrefined sugars. In the Ayurvedic kitchen, it is valued for its ability to balance Vata and Pitta doshas when used in moderation, providing a quick source of energy and a pleasing, neutral sweetness that does not overpower the delicate flavors of a dish. From a culinary perspective, Sharkara is highly versatile, serving as the standard sweetener for beverages, delicate desserts, and as an adjunct in medicinal preparations. Because of its refined nature, it is considered 'Laghu' (light) compared to heavier, unrefined sweeteners. It is traditionally used to improve the complexion and provide a sense of satisfaction after a meal, though it is best utilized as a refined condiment rather than a dietary staple.
