Grated cheese is a concentrated dairy product, often classified in classical Ayurveda under the category of 'Kilata' or 'Kurchika' (thickened milk solids). Because it is a derivative of milk that has undergone processing, its digestibility is generally considered lower than fresh milk, often requiring a strong digestive fire (Agni) to process effectively.
