Green Gram (Mudga) (Mudga)

Green gram, known in Ayurveda as Mudga, is considered the most superior of all legumes (shamidhanya). It is prized for its lightness and ease of digestion, making it a staple in both daily nutrition and convalescent diets. Unlike heavier beans, Mudga is celebrated for its ability to provide nourishment without creating excessive heaviness or digestive stagnation. In the kitchen, it is versatile, appearing as whole seeds, split with skin (chilka), or split and hulled (dhuli). It is traditionally prepared as a thin, well-cooked soup (yusha) seasoned with digestive spices. Because it is naturally astringent and cooling, it is often tempered with ghee and warming spices to balance its inherent lightness and ensure it does not aggravate Vata.

Preparation notes

Always wash thoroughly and soak for 2-4 hours to improve digestibility. For optimal digestion, cook until soft and temper with ghee, ginger, cumin, and rock salt. Sprouting increases the 'light' quality but may increase Vata, so lightly steaming sprouted beans is recommended.
