Ground cloves (Lavanga)
Ground cloves are the aromatic, dried flower buds of the Syzygium aromaticum tree, pulverized into a potent culinary spice. In the Ayurvedic kitchen, they are highly valued for their intense, warming, and pungent qualities. Because they are concentrated, ground cloves act as a powerful digestive adjunct, traditionally used to enhance the flavor and digestibility of both sweet and savory preparations. From a culinary perspective, ground cloves provide a deep, woody, and slightly numbing warmth that balances heavier or cold-natured foods. They are frequently incorporated into spice blends, baked goods, and warming beverages. Due to their potent nature, they are best used in moderation, acting as a catalyst that 'kindles' the digestive fire (agni) and helps clear the palate.
