Ground ginger (Shunthi)
Ground ginger, known in Ayurveda as Shunthi, is the dried and powdered rhizome of the ginger plant. Unlike fresh ginger, which is considered more cooling and moist, the drying process transforms the rhizome into a potent, heating, and highly digestible spice. It is a staple in the Ayurvedic kitchen, prized for its ability to kindle the digestive fire (Agni) and clear metabolic waste (Ama) from the system. In culinary practice, ground ginger offers a concentrated, pungent warmth that is less sharp than fresh ginger but more deeply penetrating. It is an essential 'Aharayogi'—a food adjunct that enhances the digestibility of other ingredients. Because of its light and dry qualities, it is frequently used in soups, stews, and spice blends to balance heavier or more mucus-forming foods, ensuring they are processed efficiently by the body.
