Recipes Through an Ayurvedic Lens

Raw Honey (Madhu)

Raw honey is highly regarded in Ayurveda as a unique substance that possesses both nutritive and scraping (lekhana) properties. Unlike refined sugars, raw honey is considered a 'yogavahi'—a carrier substance that enhances the properties of other foods it is mixed with. It is prized for its ability to penetrate deep into the tissues, making it an excellent medium for herbal preparations and a traditional addition to light, nourishing diets. In the kitchen, raw honey is valued for its distinct flavor profile and its ability to balance heavier, more grounding foods. Because it is considered 'lekhan' (scraping), it is often used to balance the heaviness of other ingredients. It is essential to note that in Ayurvedic tradition, honey should never be heated or cooked, as this is believed to alter its molecular structure and create 'ama' (metabolic toxins).

Preparation notes

Always consume raw honey at room temperature or mixed into warm (not boiling) liquids. Never cook or bake with honey, as high heat is considered to make it indigestible and potentially harmful according to Ayurvedic principles.
