Fresh Mint (Pudina / Rocani)
Fresh mint is a highly aromatic, cooling, and light herb widely valued in the Ayurvedic kitchen for its ability to stimulate the digestive fire without aggravating Pitta. It is recognized for its capacity to clear the palate, improve the flavor of food, and alleviate feelings of heaviness after a meal. Its refreshing quality makes it a staple in chutneys, cooling beverages, and as a garnish for heavy dishes. In the kitchen, fresh mint acts as a carminative, helping to ease the movement of Vata in the digestive tract. It is considered 'Rochana' (appetizer) and 'Deepana' (digestive stimulant), making it an excellent addition to meals, especially during the warmer seasons when the digestive fire may be erratic. Its light and penetrating nature helps to cut through the unctuousness of heavier foods.
