Rock sugar (Mishri) (Sita / Sharkara)

Mishri, or rock sugar, consists of large, unrefined sugar crystals derived from the concentrated sap of the sugarcane plant. Unlike highly processed white sugar, it is traditionally prepared by crystallizing sugarcane juice, resulting in a pure, cooling, and crystalline form of sucrose. In the Ayurvedic kitchen, it is prized for its gentle, soothing nature and its ability to balance the sharp, heating qualities of other ingredients. Culinary use of Mishri extends beyond simple sweetening; it is often used to impart a clean, refreshing sweetness to beverages, herbal infusions, and traditional confections. Its digestibility is considered superior to refined sugars, as it is processed with less chemical intervention, making it a preferred choice for balancing pitta-related heat in the body.

Mishri can be used as whole crystals for slow dissolution in hot liquids or crushed into a coarse powder for easier mixing into batters, cold drinks, or spice blends. It does not require tempering.
