Rock sugar (Mishri) (Sita / Sharkara)
Mishri, or rock sugar, consists of large, unrefined sugar crystals derived from the concentrated sap of the sugarcane plant. Unlike highly processed white sugar, it is traditionally prepared by crystallizing sugarcane juice, resulting in a pure, cooling, and crystalline form of sucrose.
