Split Yellow Moong Dal (Mudga)
Split yellow moong dal is the hulled and split version of the whole green gram. In Ayurvedic culinary tradition, it is considered the most digestible of all legumes. Its light, dry, and astringent nature makes it a staple for daily nourishment, particularly when the digestive fire (Agni) requires gentle support or during recovery from illness. Unlike heavier legumes, moong dal is prized for its ability to pacify Kapha and Pitta doshas without significantly aggravating Vata, provided it is prepared with appropriate unctuous substances like ghee and digestive spices. It is the primary ingredient for 'peya' (thin gruel) and 'yusha' (medicinal soup), serving as a foundational food for maintaining metabolic balance.

Preparation notes
