Mung Dal (Split Green Gram) (Mudga)

Mung Dal is widely regarded in Ayurveda as the most digestible and sattvic of all legumes. Unlike heavier beans, split mung dal (with or without the husk) is prized for its ability to provide nourishment without overwhelming the digestive fire (Agni). It is a staple in Ayurvedic kitchens, particularly for those recovering from illness or seeking a light, cleansing diet. In the kitchen, it is celebrated for its versatility and its unique property of being 'Lekhaniya' (scraping/purifying). Always rinse thoroughly until the water runs clear. Soaking for 30 minutes to 2 hours improves digestibility and reduces cooking time. For optimal digestion, always cook with digestive spices like ginger, cumin, turmeric, and hing (asafoetida) to counteract its naturally drying and Vata-aggravating qualities.
