Recipes Through an Ayurvedic Lens

Rakija (Madya)

Rakija is a traditional fruit-based distilled spirit, conceptually aligned with the 'Madya' (alcoholic beverage) category in Ayurveda. In a culinary context, it acts as a potent digestive stimulant when used in minute quantities, often utilized to enhance the assimilation of heavy or rich meals. Its character is defined by its sharp, warming nature and its ability to cut through unctuousness. From an Ayurvedic perspective, when consumed as a food adjunct, it is considered 'Deepana' (appetizing) and 'Rochana' (improving the taste of food). It is traditionally used in small amounts to stimulate the digestive fire (Agni), particularly when the diet includes heavy, oily, or cold preparations. Its quality is highly dependent on the fruit base and the fermentation process, which determines its ultimate impact on the doshas.
