Raw cane sugar (Jaggery or Khand) (Guda)

Raw cane sugar, known as Guda in Ayurveda, is the unrefined product of sugarcane juice, concentrated through evaporation without the removal of molasses. Unlike refined white sugar, it retains mineral-rich plant juices, giving it a complex, earthy flavor profile and a darker, golden-to-brown hue. In the kitchen, it acts as a foundational sweetener that provides depth to both savory and sweet preparations. From an Ayurvedic perspective, raw sugar is considered a nourishing substance. It is prized for its ability to provide quick energy, especially after periods of fasting or physical exertion, as noted in the Charaka Samhita. Its digestibility is generally considered moderate; while it is more substantial than refined sugar, it is valued for its ability to balance Vata dosha when used in moderation.

Preparation notes
