Recipes Through an Ayurvedic Lens

Red Poha (Rakta Shali Poha)

Red poha is a traditional, minimally processed form of red rice that has been parboiled and flattened. Unlike white poha, red poha retains the bran layer, which contains the grain's natural pigments and higher fiber content. In the kitchen, it is prized for its earthy flavor, slightly chewy texture, and its ability to absorb spices and liquids without turning into a mushy paste. From an Ayurvedic perspective, red rice varieties are considered the most superior among grains. Red poha inherits these qualities, offering a more nourishing and grounding profile than its white counterpart. It is favored for its ease of digestion and its ability to kindle the digestive fire (agni) while providing sustained energy, making it a staple for balanced breakfasts and light, restorative meals.

Preparation notes

Red poha requires a slightly longer soaking time than white poha due to its bran layer. Rinse gently in a colander until the water runs clear, then soak for 5-10 minutes. Drain thoroughly before tempering to ensure a fluffy texture.
