Roasted Gram Flour (Sattu) (Saktu)

Sattu is a traditional, highly nutritious flour prepared by dry-roasting Bengal gram (chana) and grinding it into a fine powder. In the Ayurvedic kitchen, it is revered as a 'sattvic' food that provides immediate, though transient, energy. It is prized for its ability to satisfy hunger quickly and its ease of digestion when prepared as a drink (mantha) or gruel. Culinary use of sattu is versatile, ranging from savory spiced drinks mixed with water, salt, and herbs, to sweet preparations combined with jaggery or honey. Because it is pre-roasted, it is considered 'laghu' (light) and 'deepana' (appetizing), making it a staple for those with active lifestyles or those needing a quick, nourishing meal that does not burden the digestive system.

Preparation notes

Sattu is best consumed as a 'mantha' (drink). Mix the flour with room temperature or cool water, adding a pinch of rock salt, roasted cumin powder, and a dash of lemon or ginger for optimal digestion. Avoid consuming it as a dry powder, as its inherent 'ruksha' (dry) quality can be difficult to swallow and may aggravate Vata if not hydrated properly.
