Scotch Bonnet Peppers (Katu-phala (generic))

Scotch Bonnet peppers are highly pungent, aromatic fruits known for their intense heat and distinctively fruity, slightly sweet flavor profile. In the Ayurvedic kitchen, they are treated as a potent 'Deepana' (digestive stimulant) and 'Rochana' (appetite enhancer). Due to their extreme 'Tikshna' (sharp) and 'Ushna' (hot) qualities, they are used sparingly to kindle the digestive fire, particularly in heavy or cold-natured meals. From a culinary perspective, they are a cornerstone of Caribbean cuisine, providing both a fiery kick and a complex, tropical aroma. Because of their high pungency, they are typically used whole to infuse flavor without releasing the full intensity of the capsaicin, or finely minced in small quantities to balance the heaviness of starchy staples like tubers and legumes.
