Recipes Through an Ayurvedic Lens

Seasoning Cubes (Aharayogi-gutika)

Seasoning cubes are concentrated, dehydrated culinary adjuncts designed to provide a quick infusion of savory flavor, salt, and aromatics to soups, stews, and grain dishes. In the context of Ayurveda, they function as a 'kritanna-varga' (prepared food) adjunct, intended to enhance the palatability of a meal. While they offer convenience, their concentrated nature requires mindful use to ensure they do not overwhelm the natural taste of the primary ingredients. From a digestive perspective, these cubes often contain a blend of salt, fats, and concentrated extracts. Because they are typically high in salt (lavana), they possess 'ushna' (heating) and 'tikshna' (sharp) qualities, which can stimulate the digestive fire (agni) when used in moderation. However, their processed nature often lacks the 'prana' (vitality) found in fresh, whole-food seasonings, making them a secondary choice compared to fresh herbs and spices prepared in the kitchen.

Preparation notes

Best added toward the end of the cooking process or dissolved in a small amount of warm water before being incorporated into the dish to ensure even distribution. Avoid excessive use to prevent masking the subtle flavors of fresh vegetables.
