Unsalted Butter (Navanita)

Unsalted butter, known in Ayurveda as Navanita, is the fresh, unclarified fat extracted from cream. Unlike ghee, which is processed through heat, fresh butter retains a more cooling and moistening quality. It is highly valued in the kitchen for its ability to provide immediate nourishment and its smooth, creamy texture that balances dry or rough food preparations. In culinary practice, unsalted butter is preferred over salted varieties to allow the cook full control over the flavor profile of a dish. It is considered a 'heavy' (Guru) food that provides sustained energy. Because it is fresh and unheated, it is generally more cooling than ghee, making it a soothing addition to warm, spiced dishes or as a finishing touch on cooked grains.
