Ash Gourd Kheer (Boodu Kumbalakai Payasam) (Kūṣmāṇḍa Kṣīrapāyasa)
A cooling, Pitta-pacifying dessert made from grated ash gourd, milk, and jaggery, perfect for summer and autumn.
Ash Gourd Kheer is a traditional, cooling dessert that highlights the sattvic nature of the ash gourd (Kūṣmāṇḍa). In Ayurveda, ash gourd is highly regarded for its ability to pacify Pitta dosha and provide deep nourishment to the tissues without creating excessive heat. This preparation transforms the vegetable into a delicate, creamy pudding, making it an ideal choice for the intense heat of Grishma (summer) and the lingering warmth of Sharad (autumn) seasons. Unlike heavier desserts, this Kheer is light yet satisfying. The combination of fresh milk, jaggery, and the cooling properties of ash gourd creates a dish that is both heart-healthy and soothing to the digestive tract. It is traditionally prepared during festivals or as a restorative treat to balance internal heat and support mental clarity.

Ingredients
- Ash Gourd — 1 cup
- Whole Milk — 1.5 cup
- Jaggery powder — 3 tbsp
- Ghee (Clarified Butter) — 1 tsp
- Green cardamom powder — 0.25 tsp
Method
- 1. Peel the ash gourd, remove the seeds and the soft inner pith, then grate the firm white flesh. (Tip: Ensure you use only the firm flesh for the best texture.)
- 2. In a heavy-bottomed pan, sauté the grated ash gourd in a teaspoon of ghee until it softens and turns translucent. (Tip: Sautéing helps remove excess water and improves digestibility.)
- 3. Add the milk to the pan and simmer on low heat until the ash gourd is fully cooked and the milk thickens slightly. (Tip: Stir frequently to prevent the milk from scorching.)
- 4. Stir in the jaggery and cardamom powder. Continue to cook for another 2-3 minutes until the jaggery is fully dissolved. (Tip: Add jaggery only after the milk has thickened to prevent curdling.)
- 5. Remove from heat and garnish with toasted cashews or almonds if desired. (Tip: Serve warm or at room temperature.)
