Method

- 2. In a bowl, whisk the fresh yogurt until smooth and fold in the cooked beetroot. (Tip: Use room temperature yogurt for better digestion.)
- 3. Heat coconut oil in a small pan. Add mustard seeds; once they pop, add curry leaves and a pinch of turmeric. (Tip: Curry leaves support digestion and add a light, aromatic quality.)
- 4. Pour the tempering over the beetroot-yogurt mixture and stir gently. (Tip: Add salt only just before serving to maintain the freshness of the yogurt.)
