Ingredients
- Fresh Yogurt — 1 cup
- Gram flour (besan) — 0.25 cup
- Ghee (Clarified Butter) — 1 tbsp
- Mustard Seeds — 0.5 tsp
- Asafoetida (Hing) — 0.25 tsp
- Curry Leaves — 8 leaves
- Turmeric — 0.25 tsp
- Rock Salt (Saindhava) — 0.5 tsp
Method
- 1. Whisk the yogurt, gram flour, turmeric, and salt with 2 cups of water until smooth. (Tip: Ensure no lumps remain to maintain a smooth consistency.)
- 2. Heat ghee in a heavy-bottomed pot. Add mustard seeds and let them pop. (Tip: Mustard seeds are heating and help pacify Vata and Kapha.)
- 3. Add asafoetida, curry leaves, and cumin seeds. Sauté for 30 seconds until aromatic. (Tip: Asafoetida is excellent for reducing gas-forming properties of legumes.)
- 4. Pour the yogurt-besan mixture into the pot. Stir continuously on medium heat until it begins to simmer. (Tip: Continuous stirring prevents the yogurt from curdling.)
- 5. Lower the heat and let it simmer for 10-12 minutes to cook the gram flour thoroughly. (Tip: Well-cooked besan is much easier to digest.)
