Ingredients

Method
- 1. Dry roast the broken wheat (daliya) in a pan over medium heat until fragrant and slightly golden. (Tip: Dry roasting is a classical technique to reduce the heavy, sticky quality of wheat.)
- 2. Heat 1 tbsp of ghee in a pot. Add mustard seeds and wait for them to pop, then add grated ginger and chopped vegetables. (Tip: Ginger stimulates Agni, ensuring the wheat is processed efficiently.)
- 3. Add the roasted daliya to the pot and stir to coat with the spices and fat. (Tip: Coating the grains in fat (Sasneha) improves nutrient absorption.)
- 4. Add 2.5 cups of warm water and a pinch of rock salt. Cover and simmer on low heat for 12-15 minutes until the water is absorbed and the grain is soft. (Tip: Using warm water prevents the shock to Agni caused by cold water.)
