Cumin Ghee Rice (Jiraka Ghrita Odana)
A foundational, digestive-supporting rice dish tempered with cumin and ghee to promote balanced assimilation.
Cumin Ghee Rice is a foundational Ayurvedic preparation, celebrated for its ability to kindle Agni (digestive fire) without overstimulating the system. By tempering cumin seeds in high-quality ghee, the aromatic volatile oils are released, which traditionally helps to reduce bloating and support the assimilation of the rice. This preparation transforms simple grains into a nourishing, easy-to-digest meal that serves as an ideal base for various therapeutic diets. In the classical tradition, rice (Shali) is considered the most wholesome grain, particularly when prepared with digestive spices like Jireka (cumin). This dish is designed to be light, grounding, and soothing to the digestive tract, making it a staple for those recovering from illness or those seeking to maintain digestive balance throughout the changing seasons.

Ingredients
- Basmati Rice — 1 cup
- Ghee (Clarified Butter) — 1 tbsp
- Cumin Seeds — 1 tsp
- Rock Salt (Saindhava) — 0.25 tsp
- Filtered Water — 2 cups
Method
- 1. Rinse 1 cup of Basmati rice under cold water until the water runs clear to remove excess starch. (Tip: Rinsing helps ensure the rice is light and fluffy, which is easier for the body to digest.)
- 2. In a heavy-bottomed pot, heat 1 tablespoon of ghee over medium heat. (Tip: Ghee is the preferred fat in Ayurveda for its ability to carry the medicinal properties of spices into the tissues.)
- 3. Add 1 teaspoon of cumin seeds to the ghee. Once they begin to crackle and release their aroma, add the rinsed rice. (Tip: Do not let the cumin burn; it should be golden brown.)
- 4. Sauté the rice in the ghee for 1-2 minutes until the grains are lightly coated. (Tip: This process, known as 'bhuna', enhances the flavor and digestibility of the grain.)
- 5. Add 2 cups of filtered water and a pinch of rock salt. Bring to a boil, then cover and reduce heat to low. (Tip: Use a tight-fitting lid to trap the steam.)
- 6. Simmer for 15-18 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
