Kaddu Sabzi (Sweet Pumpkin Stir-fry) (Kushmanda Shaka)
A grounding, sweet, and nourishing stir-fry of pumpkin tempered with ghee and aromatic spices, ideal for balancing Vata and Pitta.
Kaddu Sabzi is a traditional, grounding preparation of sweet pumpkin (Kushmanda), a vine fruit highly regarded in Ayurveda for its ability to pacify Vata and Pitta doshas. This dish is prepared by gently tempering cubes of pumpkin in ghee with mustard seeds and curry leaves, then simmering until tender. The addition of a small amount of jaggery enhances the natural sweetness, creating a dish that is both nourishing and easy to digest. In the context of the Sharad (autumn), Hemant (early winter), and Shishir (late winter) seasons, this preparation provides stable, earthy energy. Its unctuous and sweet qualities help counteract the drying and cooling effects of the environment, making it an ideal main course for those seeking to maintain balance during the colder months.

Ingredients
- Sweet Pumpkin (cubed) — 2 cups
- Ghee (Clarified Butter) — 1 tbsp
- Mustard Seeds — 0.5 tsp
- Curry Leaves — 5 leaves
- Turmeric — 0.25 tsp
- Jaggery powder — 1 tsp
- Rock Salt (Saindhava) — 0.25 tsp
Method
- 1. Heat ghee in a heavy-bottomed pan over medium heat. (Tip: Ghee is preferred for its ability to carry the qualities of the spices into the tissues.)
- 2. Add mustard seeds and curry leaves. Once the seeds pop, add turmeric powder. (Tip: Ensure the turmeric does not burn to maintain its medicinal properties.)
- 3. Add the cubed pumpkin and stir to coat evenly with the tempered ghee. (Tip: Sautéing briefly helps to improve the digestibility of the vegetable.)
- 4. Add a splash of water, cover, and cook on low heat until the pumpkin is tender. (Tip: Do not overcook; the pumpkin should retain its shape.)
- 5. Stir in the jaggery and a pinch of salt. Cook for another 2 minutes until the jaggery melts and glazes the pumpkin. (Tip: The sweetness should be subtle, not overpowering.)
