Kamal Kakdi Sabzi (Lotus Stem Stir-fry) (Bisa-Shaka)
A nourishing, fiber-rich stir-fry of lotus stem seasoned with digestive spices to support balanced Agni.
Kamal Kakdi, or lotus stem, is a prized aquatic vegetable in Ayurveda, recognized for its cooling yet nourishing properties. This stir-fry preparation highlights the crisp, fibrous texture of the stem, balanced by digestive spices like cumin, ginger, and coriander. It is a grounding dish that provides sustained energy without being overly heavy, making it an excellent choice for the transition periods of Varsha (monsoon) and Sharad (autumn) when digestive fire requires gentle support. In the Ayurvedic tradition, lotus stem (Bisa/Mrnala) is valued for its ability to pacify Vata and Kapha when prepared with appropriate warming spices. This recipe uses a light tempering (tadka) of ghee and digestive aromatics to ensure the dish is easily assimilated. The addition of a small amount of tomato or a splash of yogurt provides a subtle sour note that enhances the flavor profile while aiding in the stimulation of Agni.

Ingredients
- Lotus Stem (Kamal Kakdi) — 250 g
- Ghee (Clarified Butter) — 1 tbsp
- Cumin Seeds — 1 tsp
- Fresh Ginger — 1 tsp
- Coriander Seeds — 1 tsp
- Turmeric — 0.5 tsp
- Fresh Yogurt — 1 tbsp
- Rock Salt (Saindhava) — 0.5 tsp
Method
- 1. Wash the lotus stems thoroughly, peel the outer skin, and slice into thin rounds. Soak in water with a pinch of turmeric to remove any residual mud. (Tip: Lotus stems are aquatic; ensure they are cleaned well to remove all sediment from the internal channels.)
- 2. Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter. (Tip: Ghee is the preferred fat for its ability to carry the medicinal properties of spices into the tissues.)
- 3. Add grated ginger and sauté until fragrant. Add the lotus stem slices and stir-fry for 5-7 minutes until they begin to soften. (Tip: Sautéing in ghee helps soften the fibrous nature of the stem.)
- 4. Add turmeric, coriander powder, and a pinch of rock salt. Add a splash of water, cover, and cook until the stems are tender. (Tip: Adding a small amount of water creates steam, which ensures the stem cooks through without burning.)
- 5. Stir in a tablespoon of fresh yogurt or a small chopped tomato. Cook for another 2 minutes until the sauce coats the stems. (Tip: If using yogurt, ensure the heat is low to prevent curdling.)
