Ingredients
- Shali Rice — 0.5 cup
- Filtered Water — 4 cups
- Ghee (Clarified Butter) — 1 tsp
- Cumin Seeds — 0.5 tsp
- Curry Leaves — 5 leaves
- Rock Salt (Saindhava) — 1 pinch
Method
- 1. Cook 1/2 cup of Shali rice with 4 cups of water until very soft and mushy. (Tip: Use an open-pot method to ensure the rice is well-cooked and soft.)
- 2. Allow the rice and water mixture to sit at room temperature for 6-12 hours to initiate mild fermentation. (Tip: Cover with a clean cloth to allow airflow.)
- 3. Heat 1 tsp of ghee in a small pan. Add cumin seeds and curry leaves until fragrant. (Tip: Ensure the ghee is not smoking.)
- 4. Stir the tempering into the fermented rice water and add a pinch of rock salt. (Tip: Serve warm for better digestibility.)
