Ingredients

Method
- 1. Wash and thinly slice the bitter gourd (karela). Sprinkle with a pinch of salt and let sit for 10 minutes to reduce excess bitterness, then squeeze out the liquid. (Tip: This process helps reduce the intense bitter potency, making it more palatable.)
- 2. Heat ghee in a pan over medium heat. Add asafoetida and turmeric powder, allowing them to bloom for 30 seconds. (Tip: Frying spices in ghee (Samskara) enhances their bioavailability.)
- 3. Add the sliced karela to the pan and stir-fry until golden brown and tender. (Tip: Ensure the gourd is well-cooked to maintain its light quality.)
