Ingredients
- Cucumber — 1 cup
- Fresh Yogurt — 0.5 cup
- Cumin Seeds — 0.5 tsp
- Rock Salt (Saindhava) — 0.25 tsp
- Coriander Seeds — 1 tbsp
Method
- 1. Peel and finely grate the cucumber. Squeeze out excess water to ensure the raita is not too watery. (Tip: Retaining a little juice is fine, but removing the bulk of it makes the raita more stable.)
- 2. In a bowl, whisk the fresh yogurt until smooth. If the yogurt is very thick, add a tablespoon of water. (Tip: Using well-strained yogurt (as per classical texts) ensures it is easier to digest.)
- 3. Fold in the grated cucumber, roasted cumin powder, and a pinch of rock salt. (Tip: Roasted cumin is preferred as it is more Dipana (digestive) than raw powder.)
- 4. Garnish with freshly chopped coriander leaves and serve immediately. (Tip: Serve at room temperature rather than ice-cold to protect the digestive fire.)
