Ingredients
- Bottle Gourd (Lauki) — 2 cups
- Whole Milk — 1 cup
- Ghee (Clarified Butter) — 1 tbsp
- Jaggery powder — 2 tbsp
- Green cardamom powder — 0.25 tsp
Method
- 1. Peel and grate the bottle gourd, removing the seeds and soft center. (Tip: Use only the firm, green outer flesh for better texture.)
- 2. Heat ghee in a heavy-bottomed pan and sauté the grated lauki until soft and aromatic. (Tip: Sautéing in ghee helps improve the digestibility of the vegetable.)
- 3. Add milk and simmer on low heat until the liquid is absorbed and the mixture thickens. (Tip: Stir frequently to prevent the milk from sticking to the bottom.)
- 4. Stir in the jaggery or sugar and cardamom powder. Cook for another 2-3 minutes. (Tip: If using honey, ensure the heat is off and the dish has cooled slightly before stirring in.)
- 5. Garnish with slivered almonds or pistachios and serve warm. (Tip: Warm serving temperature supports Agni better than cold.)
