Lauki (Bottle Gourd) is a quintessential cooling vegetable in Ayurveda, prized for its high water content and light, hydrating properties. This stir-fry preparation, or 'Shaka', is designed to be easily digestible while pacifying excess heat in the body. By sautéing the gourd with digestive spices like cumin and ginger, we ensure the dish remains 'Dipana' (appetizing) without increasing the heavy qualities of the vegetable. This dish is particularly suited for the Grishma (summer) and Sharad (autumn) seasons, where the internal environment requires cooling and moisture. Ingredients

- Rock Salt (Saindhava) — 0.5 tsp
Method
- 1. Peel the bottle gourd and chop into 1/2-inch cubes. (Tip: Ensure the gourd is fresh and firm; avoid bitter pieces.)
- 2. Heat ghee in a pan over medium heat. Add cumin seeds and wait for them to crackle. (Tip: Cumin is 'Dipana' and helps ignite the digestive fire.)
- 3. Add grated ginger and turmeric powder, sautéing for 30 seconds until fragrant. (Tip: Ginger adds a gentle warmth that balances the cooling nature of the gourd.)
- 4. Add the chopped bottle gourd and a pinch of rock salt. Stir well to coat. (Tip: Rock salt (Saindhava Lavana) is preferred in Ayurveda for its cooling properties.)
- 5. Cover and cook on low heat for 10-12 minutes until the gourd is tender but not mushy. (Tip: The gourd will release its own water; avoid adding extra water unless necessary.)
