Majadito Tostado is the golden jewel of Eastern Bolivian cuisine, hailing specifically from the tropical department of Santa Cruz. Unlike its creamy counterpart, the 'Batido', this 'Tostado' version features toasted rice that is fluffy and distinct, offering a delightful texture similar to a Latin American pilaf or fried rice. The star ingredient is charque—dried, salted beef jerky—which provides an intense savory depth and a satisfying chewy crunch after being shredded and fried. Infused with the vibrant orange hue of urucú (annatto) oil, this dish is a feast for the eyes as well as the palate. Traditionally served as a hearty breakfast or lunch in the bustling street markets of the lowlands, it is almost always accompanied by a classic trio of sides: a sunny-side-up egg, sweet fried plantains, and sometimes a fresh tomato and onion salad. This recipe brings the authentic, comforting flavors of the Bolivian tropics straight to your kitchen.

Ingredients
- Charque (Dried Beef Jerky) — 500 g
- Long Grain White Rice — 2 cup
- Red Onion — 1
- Red bell pepper — 1/2 cup
- Garlic (minced) — 3 clove
- Vegetable Oil — 4 tbsp
- Annatto Powder — 1 tbsp
- Beef Stock — 4 cup
- Ripe Plantains — 2
- Egg — 4
- Salt — To taste
- Cumin Seeds — 1/2 tsp
Method
- 1. First, prepare the charque (dried meat). Place the meat in a pot of water and boil for 15-20 minutes to remove excess salt and soften it. Drain well.
- 2. Once cooled slightly, pound the meat with a meat mallet or mortar to break down fibers, then shred it into thin strands with your fingers.
- 3. Heat 2 tablespoons of oil in a large skillet or caldero (iron pot) over medium-high heat. Add the shredded charque and fry until it turns dark brown and crispy. Remove the meat from the pan and set aside, leaving the flavored oil in the pan.
- 4. In the same pan, add the diced onion, red bell pepper, and minced garlic. Sauté until the onions are translucent and fragrant.
- 5. Stir in the annatto powder (or paprika) and cumin, mixing well to create a reddish oil base.
- 6. Add the uncooked rice to the pan. Stir constantly for 3-4 minutes to toast the rice grains in the oil and vegetable mixture (this is crucial for the 'tostado' texture). The rice should look pearly and slightly golden.
- 7. Return the fried charque to the pan and mix with the rice.
- 8. Pour in the beef stock or water. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 20 minutes, or until the liquid is absorbed and rice is tender.
- 9. While the rice cooks, heat remaining oil in a separate frying pan. Fry the plantain slices until golden brown and caramelized. In the same pan, fry the eggs sunny-side up.
- 10. Fluff the rice with a fork. Serve the Majadito immediately, topped with a fried egg and accompanied by the fried plantains on the side.
