Masoor Dal Khichdi with Seasonal Vegetables (Masura Khichadi)
A light, nourishing, and easily digestible one-pot meal of red lentils and seasonal vegetables, ideal for supporting digestion during transitional seasons.
This Masoor Dal Khichdi is a refined, easily digestible preparation that utilizes red lentils, known in classical texts for their lightness and ability to support the body during recovery. Unlike the heavier Moong Dal variants, Masoor Dal offers a slightly more astringent and cooling profile, making it an excellent choice for balancing Kapha and Vata when prepared with warming digestive spices. Incorporating seasonal vegetables like carrots, green beans, or peas adds fiber and vital nutrients, aligning the meal with the principles of Ritucharya (seasonal regimen). This one-pot meal is designed to be nourishing without being heavy, making it an ideal choice for a light dinner or a restorative lunch during the transition periods of Shishir (late winter) and Varsha (monsoon).
