Light Mung Dal Soup (Mudgayusha)
A gentle, easily digestible soup made from split mung dal and digestive spices, traditionally used to support recovery and maintain metabolic balance.
Mudgayusha is a foundational preparation in Ayurvedic nutrition, revered for its ability to provide essential nourishment without taxing the digestive fire (Agni). This light, restorative soup is prepared using split green mung beans, which are considered the most digestible of all legumes. By simmering the dal until soft and tempering it with digestive spices, we create a dish that is both grounding and easy to assimilate. Traditionally, this soup is used as a staple during recovery or as a gentle cleanse for the digestive tract. The inclusion of ghee and specific spices like cumin and turmeric helps to balance the naturally cooling and drying qualities of the mung bean, making it a tridoshic staple that supports metabolic health across all seasons, particularly during the transition of Vasant (Spring) and the dampness of Varsha (Monsoon).

- Category: Soup
- Meal: lunch
Ingredients
- Mung Dal (Split Green Gram) — 0.5 cup
- Turmeric Powder — 0.5 tsp
- Cumin Seeds — 0.5 tsp
- Ghee (Clarified Butter) — 1 tsp
- Rock Salt (Saindhava) — 1 pinch
- Filtered Water — 3 cups
Method
- 1. Rinse 1/2 cup of split mung dal thoroughly under cold water until the water runs clear. (Tip: Rinsing removes excess starch and improves digestibility.)
- 2. In a pot, combine the rinsed dal with 3 cups of water and 1/2 tsp turmeric. Bring to a boil, then reduce heat to low and simmer until the dal is soft and broken down. (Tip: Skim off any white foam that rises to the surface during the first few minutes of boiling.)
- 3. In a separate small pan, heat 1 tsp of ghee. Add 1/2 tsp cumin seeds and toast until they become fragrant. (Tip: Toasting spices in ghee releases their essential oils, enhancing their digestive properties.)
- 4. Pour the tempered ghee and spices into the cooked dal. Add rock salt to taste and stir well. (Tip: Rock salt (Saindhava) is preferred in Ayurveda as it is considered less heating and more mineral-rich than sea salt.)
