Murungai Keerai Thoran (Moringa Leaf Stir-fry) (Shigru Patra Shaka)
A light, nutrient-dense stir-fry of moringa leaves and coconut, traditionally used to support digestion and balance Kapha and Vata.
Murungai Keerai Thoran is a traditional South Indian preparation featuring fresh moringa leaves, which are highly regarded in Ayurveda for their ability to balance Kapha and Vata doshas. The leaves are gently sautéed with mild spices and finished with fresh grated coconut, creating a dish that is both nourishing and easy to digest. This stir-fry highlights the 'Shigru' plant, which is classically described as having digestive, appetizing, and scraping (lekhana) properties. By incorporating these nutrient-dense leaves into a light, home-style meal, one can support healthy digestive fire (agni) without aggravating Pitta, provided the preparation remains mild and balanced.

Ingredients
- Fresh Moringa Leaves — 2 cups
- Grated Coconut — 0.25 cup
- Ghee (Clarified Butter) — 1 tbsp
- Mustard Seeds — 0.5 tsp
- Asafoetida (Hing) — 0.1 tsp
- Turmeric — 0.25 tsp

Method
- 1. Wash and pick the moringa leaves from the woody stems. Ensure they are dry. (Tip: Only use the tender leaves for better texture.)
- 2. Heat 1 tsp of ghee in a pan. Add mustard seeds and let them splutter. (Tip: Mustard seeds aid in the digestion of leafy greens.)
- 3. Add a pinch of asafoetida and the moringa leaves. Sauté on medium heat until they wilt. (Tip: Do not overcook; keep the leaves vibrant green.)
- 4. Stir in the grated coconut, a pinch of turmeric, and salt to taste. (Tip: Coconut adds a necessary sweet quality to balance the bitter leaves.)
