Patola Katuka Sabzi (Patola-Karavellaka Shaka)
A sattvic, liver-supportive stir-fry of pointed gourd and bitter gourd, balanced with spices and jaggery to pacify Pitta and Kapha.
Patola Katuka Sabzi is a refined, therapeutic stir-fry that harmonizes the cooling, cleansing properties of pointed gourd (patola) with the bitter, digestive-stimulating nature of bitter gourd (karela). In Ayurvedic tradition, this combination is highly regarded for its ability to pacify excess Pitta and Kapha, particularly during the transition seasons of Grishma (summer) and Sharad (autumn) when the liver and blood require gentle support. The inclusion of turmeric and asafoetida provides a digestive foundation, while a measured touch of jaggery acts as a 'yogavahi'—a carrier that balances the intense bitterness without negating the therapeutic impact. This dish is designed to be a light, sattvic main course that supports metabolic clarity and systemic detoxification, aligning with the classical emphasis on bitter herbs for maintaining internal balance.

Ingredients
- Pointed Gourd (Patola) — 200 g
- Bitter Gourd (Karela) — 100 g
- Ghee (Clarified Butter) — 1 tbsp
- Turmeric — 0.5 tsp
- Asafoetida (Hing) — 0.25 tsp
- Jaggery powder — 1 tsp
- Mustard Seeds — 0.5 tsp
Method
- 1. Wash and slice the pointed gourd and bitter gourd into thin rounds. Remove seeds from bitter gourd if preferred to reduce intensity. (Tip: Soaking bitter gourd in salt water for 10 minutes can reduce excessive bitterness.)
- 2. Heat ghee in a pan over medium heat. Add mustard seeds and asafoetida (hing). (Tip: Wait for the mustard seeds to pop to ensure they are fully cooked.)
- 3. Add the sliced gourds and turmeric. Sauté for 5-7 minutes until they begin to soften. (Tip: Keep the pan uncovered to maintain the vibrant color and lightness of the vegetables.)
- 4. Add a splash of water, cover, and cook for another 5 minutes until tender. (Tip: Do not overcook; the vegetables should retain a slight crunch.)
- 5. Stir in the jaggery and a pinch of rock salt. Toss well and remove from heat. (Tip: The jaggery should just glaze the vegetables, not create a syrup.)
