Peyusham (Herbal Milk Porridge) (Kshira-Shali Peya)

Peyusham is a traditional, restorative porridge prepared by slow-cooking Shali rice in milk. Rooted in the classical Ayurvedic tradition of 'Kritanna' (prepared food), this dish is specifically recommended for post-therapeutic recovery, digestive weakness, and general tissue building. Its gentle, unctuous nature provides immediate nourishment to the Dhatus (tissues) without taxing the Agni (digestive fire). By incorporating warming aromatics like cardamom and ginger, this porridge balances the cooling, heavy qualities of milk, making it an ideal breakfast for Vata and Pitta constitutions. It is designed to be easily assimilated, providing a soothing effect on the gastrointestinal tract while promoting Ojas (vitality).

Ingredients
- Shali Rice — 0.5 cup
- Whole Milk — 2 cup
- Filtered Water — 1 cup
- Fresh Ginger — 0.5 tsp
- Green cardamom powder — 2 pieces
- Jaggery powder — 1 tbsp
- Ghee (Clarified Butter) — 1 tsp
Method
- 1. Rinse 1/2 cup of Shali (or white basmati) rice thoroughly. (Tip: Soaking the rice for 30 minutes prior improves digestibility.)
- 2. In a heavy-bottomed pot, combine rice with 2 cups of milk and 1 cup of water. (Tip: Using a clay pot is traditionally preferred for even heat distribution.)
- 3. Add 1/2 tsp of freshly grated ginger and 2 crushed cardamom pods. (Tip: Ginger helps kindle Agni to digest the milk proteins.)
- 4. Simmer on low heat until the rice is soft and the mixture reaches a porridge-like consistency. (Tip: Stir occasionally to prevent sticking.)
- 5. Remove from heat. Once cooled to a warm, comfortable temperature, stir in 1 tbsp of jaggery and 1 tsp of ghee. (Tip: Adding jaggery to boiling milk can cause curdling; always add after removing from heat.)
