Sabudana Kheer (Tapioca Pearl Pudding) (Sāmudāyika Payasa)
A creamy, cooling, and energy-dense pudding traditionally prepared for fasting, known for its ease of digestion and nourishing qualities.
Sabudana Kheer is a traditional, nourishing sweet dish prepared by simmering tapioca pearls (sago) in milk, often enriched with cardamom and nuts. In Ayurvedic tradition, this preparation is valued for its ability to provide quick, easily digestible energy, making it a staple during fasting periods (vrata) when the digestive fire (agni) may require lighter, yet sustaining, nourishment. The dish is characterized by its cooling properties and soothing texture, which helps pacify Pitta dosha and ground Vata dosha. By utilizing milk—a substance traditionally recognized for its building and nourishing qualities—this pudding serves as a gentle tonic, particularly during the humid, transitionary periods of Varsha (monsoon) or the cooling onset of Hemant (early winter).

Ingredients
- Tapioca pearls (Sabudana) — 0.5 cup
- Whole Milk — 2 cup
- Jaggery powder — 3 tbsp
- Green cardamom powder — 0.25 tsp
- Almonds — 1 tbsp
Method
- 1. Soak 1/2 cup of tapioca pearls in water for 2-4 hours until they become soft and translucent. (Tip: Proper soaking ensures even cooking and better digestibility.)
- 2. In a heavy-bottomed pot, bring 2 cups of milk to a gentle boil. (Tip: Use full-fat milk for better nourishment.)
- 3. Add the soaked tapioca pearls to the milk and simmer on low heat, stirring frequently to prevent sticking. (Tip: Stirring helps maintain the creamy consistency.)
- 4. Once the pearls are transparent and the mixture thickens, stir in 3-4 tablespoons of jaggery or raw sugar. (Tip: If using jaggery, add it after turning off the heat to prevent the milk from curdling.)
