Sama Chawal Kheer (Barnyard Millet Pudding) (Shyamaka Ksheerapaka)
A nourishing, light, and sattvic pudding made from barnyard millet, milk, and jaggery, perfect for fasting and seasonal transitions.
Sama Chawal Kheer is a traditional, sattvic preparation featuring Shyamaka (barnyard millet), a grain historically revered in Ayurveda for its light, astringent-sweet properties. Unlike heavier rice-based puddings, this preparation is valued for its ability to provide nourishment without overwhelming the digestive fire (Agni), making it an ideal choice for fasting periods or as a restorative dessert during the transition seasons of Sharad (autumn) and Hemant (early winter). The dish combines the cooling, building nature of milk with the light, drying quality of millet. When sweetened with jaggery and infused with cardamom, it creates a balanced profile that supports the body's tissues while maintaining digestive ease. It is a classic example of 'Kritanna' (prepared food), designed to be both satisfying and easy to assimilate, adhering to the Ayurvedic principle of consuming light, wholesome grains during periods of spiritual or physical cleansing.

Ingredients
- Barnyard Millet (Samak) — 0.5 cup
- Whole Milk — 2 cup
- Jaggery powder — 3 tbsp
- Green cardamom powder — 3 pods
Method
- 1. Rinse the barnyard millet (Sama chawal) thoroughly under cold water until the water runs clear. (Tip: Rinsing removes any dust and helps improve the digestibility of the grain.)
- 2. In a heavy-bottomed pot, bring the milk to a gentle simmer over medium heat. (Tip: Using a heavy-bottomed pot prevents the milk from scorching.)
- 3. Add the rinsed millet to the simmering milk. Reduce heat to low and cook, stirring occasionally, for 15-18 minutes until the millet is soft and the mixture has thickened. (Tip: The millet should be soft but not mushy.)
- 4. Stir in the crushed cardamom pods and jaggery. Continue to cook for another 2 minutes until the jaggery is fully dissolved. (Tip: Add jaggery only at the end to prevent the milk from curdling.)
- 5. Remove from heat and let it cool slightly before serving warm. (Tip: Serving warm is better for Agni than consuming it chilled.)
