Tfaya is a crowning jewel of Maghrebi cuisine, a luscious and aromatic garnish that transforms a simple dish into a festive feast. Originating from the shared culinary traditions of Algeria and Morocco, this sweet and savory condiment consists of slowly caramelized onions and plump raisins, stewed to a jam-like consistency. Infused with warming spices such as cinnamon, ginger, turmeric, and a delicate pinch of saffron, Tfaya offers a complex flavor profile that perfectly balances the savory richness of meats and the fluffy texture of steamed couscous. While traditionally served atop a mountain of couscous or savory lamb tagines during celebrations and holidays like Eid, this golden delight has found its way into modern street food culture as a topping for grilled meats or a side to artisan breads. The secret to authentic Tfaya lies in patience; the onions must be cooked gently until they melt into a glossy, fragrant confit. Whether you are looking to elevate a Friday family lunch or explore the depths of North African flavors, this recipe brings the sweet warmth of the Casbah straight to your kitchen.

Ingredients
- Yellow Onions — 1 kg
- Golden Raisins — 150 g
- Vegetable Oil — 2 tbsp
- Unsalted Butter — 30 g
- Ground Cinnamon — 2 tsp
- Cinnamon Powder — 1 piece
- Ground ginger — 1 tsp
- Ground turmeric — 1 tsp
- Saffron strands — 1
- Granulated sugar — 3-4 tbsp
- Salt — 1/2 tsp
- Black Pepper — 1/4 tsp
- Orange Blossom Water — 1 tbsp
Method
- 1. Begin by soaking the raisins in a bowl of warm water for at least 15 to 20 minutes to plump them up. Drain and set aside.
- 2. Peel the onions, cut them in half, and slice them thinly into uniform half-moons.
- 3. In a large pot or deep skillet, combine the sliced onions, vegetable oil, butter (or Smen), cinnamon stick, ground ginger, turmeric, saffron, salt, and black pepper.
- 4. Cover the pot and cook over medium-low heat for about 20-30 minutes. Stir occasionally. The goal is to sweat the onions until they are very soft and translucent, allowing them to release their natural water.
- 5. Once the onions are soft and the liquid has reduced slightly, remove the lid. Add the drained raisins, ground cinnamon, and sugar (or honey).
- 6. Reduce the heat to low. Continue to cook uncovered, stirring frequently to prevent sticking or burning. This is the caramelization stage and requires patience.
- 7. Simmer for another 20-30 minutes until the mixture turns a rich, golden-brown amber color and the liquids have evaporated, leaving a jam-like consistency.
- 8. Stir in the orange blossom water (if using) and cook for one final minute.
- 9. Remove the cinnamon stick. Serve warm as a topping over couscous, grilled chicken, or lamb, or let it cool to serve as a condiment.
